AYAM GEPREK MEMBARA

 Ayam Geprek is a popular Indonesian dish that combines crispy fried chicken with a spicy sambal. The name "geprek" means "smashed," referring to the process of smashing the chicken after it's fried. Here's how you can make Ayam Geprek at home:


Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 2 cups of all-purpose flour
  • 1 cup of cornstarch
  • 1 teaspoon of baking powder
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of paprika
  • 2 eggs, beaten
  • 1 cup of buttermilk (or regular milk with 1 tablespoon of lemon juice)
  • Vegetable oil for frying

For the Sambal:

  • 25-40 red chilies (adjust to your spice preference)
  • 5 cloves of garlic
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 2 tablespoons of vegetable oil

Instructions:

Preparing the Chicken:

  1. Marinate the Chicken: In a bowl, mix the beaten eggs and buttermilk. Add the chicken breasts and let them marinate for at least 30 minutes to 1 hour in the refrigerator.

  2. Prepare the Coating: In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and paprika.

  3. Coat the Chicken: Remove the chicken from the marinade. Dredge each piece in the flour mixture, ensuring they are well-coated. For extra crispiness, dip the chicken back into the buttermilk mixture and then coat it again in the flour mixture.

  4. Fry the Chicken: Heat the vegetable oil in a deep frying pan or pot to 350°F (175°C). Fry the chicken pieces until golden brown and crispy, about 6-8 minutes per side, depending on the thickness. Ensure the chicken is cooked through. Remove and drain on paper towels.

Preparing the Sambal:

  1. Blend the Sambal: In a blender or food processor, combine the red chilies, garlic, salt, and sugar. Blend until you get a coarse paste.

  2. Cook the Sambal: Heat the vegetable oil in a small pan over medium heat. Add the blended chili paste and cook until fragrant and slightly caramelized, about 5-7 minutes. Remove from heat.

Assembling Ayam Geprek:

  1. Smash the Chicken: Place the fried chicken on a flat surface and use a mortar and pestle or the back of a knife to gently smash the chicken, making it easier to absorb the sambal.

  2. Top with Sambal: Generously spoon the sambal over the smashed fried chicken.

  3. Serve: Serve Ayam Geprek with steamed rice, sliced cucumbers, and fresh herbs such as basil or cilantro. You can also add a fried egg for an extra touch.
