Lumpia Basah - unfried version of spring rolls
"Lumpia Basah" translates to "wet spring rolls" in English. Unlike the typical deep-fried lumpia, lumpia basah is a fresh, unfried version of spring rolls commonly found in Indonesia, especially in Java. It's essentially a softer, fresher alternative to the crispy lumpia, usually filled with various vegetables, sometimes tofu or shrimp, and served with a peanut sauce.
Here's a basic recipe for Lumpia Basah:
Ingredients:
For the filling:
- 1 package of lumpia wrappers (spring roll wrappers)
- 2 cups shredded lettuce or cabbage
- 1 carrot, julienned
- 1 cucumber, julienned
- 1 block of firm tofu, diced (optional)
- 1 cup bean sprouts
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh cilantro (coriander)
- Cooked shrimp, peeled and deveined (optional)
- Cooked rice vermicelli noodles (optional)
For the sauce:
- 1 cup unsweetened peanut butter
- 1/4 cup soy sauce
- 2 tablespoons brown sugar (adjust to taste)
- 1 tablespoon lime juice
- 1 clove garlic, minced
- 1/2 cup water (adjust for desired consistency)
- Chili paste or sriracha sauce to taste (optional)
Instructions:
Prepare the sauce by combining peanut butter, soy sauce, brown sugar, lime juice, minced garlic, and water in a saucepan over medium heat. Stir continuously until the sauce is smooth and well combined. Add chili paste or sriracha sauce if desired for some heat. Set aside to cool.
Prepare the filling ingredients by chopping and julienning the vegetables and tofu. Cook the shrimp and rice vermicelli noodles if using.
To assemble the lumpia basah, take a lumpia wrapper and lay it flat on a clean surface. Place a small amount of each filling ingredient (lettuce, carrots, cucumber, tofu, bean sprouts, green onions, cilantro, shrimp, and noodles if using) in the center of the wrapper.
Fold the bottom edge of the wrapper over the filling, then fold the sides inward, and roll it up tightly. Repeat with the remaining wrappers and filling.
Serve the lumpia basah with the prepared peanut sauce for dipping.
Lumpia basah is best enjoyed fresh, and you can customize the filling according to your preference. It's a refreshing and healthy snack or appetizer option!
