Lumpia Rebung - Indonesian spring rolls filled with bamboo shoots

 Lumpia Rebung is a variation of Indonesian spring rolls filled with bamboo shoots. Here's a recipe for making Lumpia Rebung:


Ingredients:

  • 200g bamboo shoots, finely chopped
  • 200g ground pork or chicken
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 carrot, julienned
  • 1 cup cabbage, thinly sliced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Lumpia wrappers (spring roll wrappers)
  • Oil for frying

Instructions:

  1. Heat some oil in a pan over medium heat. Add minced garlic and chopped onion, sauté until fragrant.
  2. Add ground pork or chicken to the pan, and cook until browned.
  3. Stir in the chopped bamboo shoots, julienned carrots, and thinly sliced cabbage. Cook for another 3-4 minutes until the vegetables are tender.
  4. Season the filling with soy sauce, sesame oil, salt, and pepper. Mix well to combine all the flavors. Remove from heat and let it cool.
  5. Take a lumpia wrapper and place about 2 tablespoons of the bamboo shoot filling in the center.
  6. Fold the sides of the wrapper over the filling and then roll it up tightly, sealing the edge with a little water to secure the roll.
  7. Repeat the process with the remaining wrappers and filling.
  8. Heat oil in a deep frying pan or wok over medium heat. Fry the lumpia in batches until they are golden brown and crispy, about 3-4 minutes per batch.
  9. Remove the fried lumpia from the oil and drain them on paper towels to remove excess oil.
  10. Serve the Lumpia Rebung hot with your favorite dipping sauce, such as sweet chili sauce or soy sauce.
