AYAM MENTEGA ( Butter Chicken )
Ayam Mentega, or Butter Chicken, is a flavorful Indonesian dish where chicken is cooked in a rich, creamy, and buttery sauce. It's a popular dish that's often enjoyed with steamed rice or noodles. Here's a simple recipe to make Ayam Mentega at home:
Ingredients:
- 500 grams of chicken thighs or breast, cut into bite-sized pieces
- 3 tablespoons of butter
- 2 tablespoons of vegetable oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 2 teaspoons of ginger paste
- 1 teaspoon of chili flakes (adjust to taste)
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric powder
- 1 teaspoon of sweet soy sauce (kecap manis)
- 200 ml of coconut milk
- Salt and pepper to taste
- Chopped cilantro or parsley for garnish
Instructions:
Marinate the Chicken: In a bowl, combine the chicken pieces with a pinch of salt, pepper, and half of the ginger paste. Let it marinate for at least 30 minutes.
Cook the Chicken: Heat vegetable oil in a large skillet or pan over medium heat. Add the marinated chicken pieces and cook until they are golden brown on all sides. Remove the chicken from the pan and set it aside.
Make the Sauce: In the same pan, melt the butter over medium heat. Add the chopped onion and cook until it becomes translucent. Stir in the minced garlic, remaining ginger paste, chili flakes, ground coriander, ground cumin, and turmeric powder. Cook for a few minutes until the spices are fragrant.
Combine Chicken and Sauce: Return the cooked chicken to the pan. Add the sweet soy sauce and coconut milk. Stir well to combine all the ingredients.
Simmer: Let the chicken simmer in the sauce for about 10-15 minutes, or until the sauce thickens slightly and the chicken is cooked through. Stir occasionally.
Adjust Seasoning: Taste the sauce and adjust the seasoning with salt and pepper if needed.
Garnish and Serve: Once the chicken is cooked and the sauce has reached the desired consistency, remove from heat. Garnish with chopped cilantro or parsley before serving.
