Ingredients:
- 4 medium-sized potatoes, peeled and cut into cubes
- 3 tablespoons of vegetable oil
- 5 shallots, thinly sliced
- 3 cloves of garlic, minced
- 5-10 red bird's eye chilies (adjust to taste), thinly sliced
- 2 large tomatoes, chopped
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of tamarind paste, dissolved in 2 tablespoons of water
- 1 teaspoon of palm sugar (or brown sugar)
- Salt to taste
- Water, as needed
- Fried shallots for garnish
Instructions:
Cooking the Potatoes:
Parboil the Potatoes: Place the potato cubes in a pot of boiling water and cook for about 5 minutes, or until they are slightly tender but still firm. Drain the potatoes and set them aside.
Fry the Potatoes: Heat vegetable oil in a large pan or wok over medium-high heat. Fry the parboiled potato cubes until they are golden brown and crispy on the outside. Remove them from the pan and set them aside.
Making the Balado Sauce:
Sauté Aromatics: In the same pan, add a little more oil if needed. Sauté the sliced shallots, minced garlic, and sliced red chilies until fragrant and the shallots are translucent.
Add Tomatoes: Add the chopped tomatoes to the pan and cook until they are soft and mushy, breaking them down with the back of a spoon.
Add Sweet Soy Sauce: Stir in the sweet soy sauce and cook for another minute.
Add Tamarind Paste and Sugar: Pour in the dissolved tamarind paste and palm sugar. Mix well to combine all the ingredients.
Simmer: Add a little water if the sauce is too thick. Simmer the sauce for a few minutes until it thickens slightly and the flavors meld together.
Adjust Seasoning: Taste the sauce and adjust the seasoning with salt if needed.
Combining Potatoes and Sauce:
Add Potatoes: Return the fried potato cubes to the pan and toss them with the balado sauce until they are well coated.
