NASI GORENG TERI

Nasi Goreng Teri Recipe
Ingredients:
- 2 cups cooked rice (preferably leftover and cooled)
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- 100g dried anchovies (teri), rinsed and drained
- 2 eggs, beaten
- 1 cup mixed vegetables (such as carrots, peas, and bell peppers), finely chopped
- 2 tablespoons sweet soy sauce (kecap manis)
- 1 tablespoon soy sauce
- 1 teaspoon shrimp paste (optional)
- Salt and pepper to taste
- Sliced cucumber and tomato, for garnish
- Fried shallots, for garnish
- Lime wedges, for serving
Instructions:
- Heat the vegetable oil in a wok or large frying pan over medium heat.
- Add minced garlic and chopped onion. Sauté until fragrant and the onion turns translucent.
- Add dried anchovies (teri) to the pan. Stir-fry until the anchovies are crispy and golden brown. Remove from the pan and set aside.
- In the same pan, pour the beaten eggs into the empty side. Scramble the eggs until they are cooked. Set aside with the anchovies.
- Add the mixed vegetables to the pan. Stir-fry for a few minutes until the vegetables are slightly tender.
- Add the cooked rice to the pan. Break up any clumps and stir-fry with the vegetables.
- Drizzle sweet soy sauce and regular soy sauce over the rice. Add shrimp paste if using. Mix well to ensure the rice is evenly coated.
- Season with salt and pepper to taste.
- Add the cooked anchovies and scrambled eggs back into the pan. Mix everything together until well combined.
- Continue to stir-fry until everything is heated through.
- Garnish with sliced cucumber, tomato, and fried shallots.
- Serve hot with lime wedges on the side.
