Semur Telur Istimewa

 Semur Telur is a classic Indonesian dish featuring boiled eggs simmered in a rich, sweet, and savory sauce. It's a comforting and flavorful dish that pairs well with steamed rice. Here's how you can make Semur Telur at home:


Ingredients:

  • 6 hard-boiled eggs, peeled
  • 3 tablespoons of vegetable oil
  • 5 shallots, thinly sliced
  • 3 cloves of garlic, minced
  • 2 cm piece of ginger, minced
  • 2 cm piece of galangal, bruised
  • 3 kaffir lime leaves
  • 2 Indonesian bay leaves (salam leaves)
  • 2 lemongrass stalks, bruised
  • 4 tablespoons of sweet soy sauce (kecap manis)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of palm sugar (or brown sugar)
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground nutmeg
  • 1/2 teaspoon of ground black pepper
  • Salt to taste
  • 500 ml of water or vegetable broth
  • Fried shallots for garnish

Instructions:

Preparing the Eggs:

  1. Hard-Boil the Eggs: Place the eggs in a pot and cover them with cold water. Bring the water to a boil, then reduce the heat and let the eggs simmer for about 10-12 minutes. Remove the eggs from the pot and place them in cold water to stop the cooking process. Peel the eggs once they are cool enough to handle.

Cooking the Semur:

  1. Sauté Aromatics: Heat vegetable oil in a large pan or pot over medium heat. Add the sliced shallots, minced garlic, ginger, and bruised galangal. Sauté until fragrant and the shallots are translucent.

  2. Add Herbs and Spices: Add the kaffir lime leaves, bay leaves, and bruised lemongrass. Continue to sauté for a few minutes to release the aromas.

  3. Add Eggs and Seasonings: Add the hard-boiled eggs to the pan. Stir in the sweet soy sauce, soy sauce, palm sugar, ground coriander, ground nutmeg, and ground black pepper. Mix well to coat the eggs with the seasonings.

  4. Simmer: Pour in the water or vegetable broth and bring the mixture to a boil. Reduce the heat to low and let it simmer uncovered for about 20-30 minutes, or until the sauce has thickened and the eggs are infused with the flavors. Stir occasionally.

  5. Adjust Seasoning: Taste and adjust the seasoning with salt if needed.

Serving:

  1. Garnish and Serve: Transfer the Semur Telur to a serving dish and garnish with fried shallots.

  2. Accompaniments: Serve with steamed rice and side dishes like sambal, fresh vegetables, or kerupuk (Indonesian crackers).
