Nasi Goreng Kambing Recipe

Ingredients:

  • 2 cups cooked rice (preferably leftover and cooled)
  • 300g goat meat, diced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 red chilies, finely chopped (adjust to taste)
  • 2 eggs, beaten
  • 1 cup mixed vegetables (such as carrots, peas, and bell peppers), finely chopped
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 1 tablespoon soy sauce
  • 1 teaspoon shrimp paste (optional)
  • Salt and pepper to taste
  • Sliced cucumber and tomato, for garnish
  • Fried shallots, for garnish
  • Lime wedges, for serving

Instructions:

  1. Heat the vegetable oil in a wok or large frying pan over medium heat.
  2. Add minced garlic, chopped onion, and red chilies. Sauté until fragrant and the onion turns translucent.
  3. Add diced goat meat to the pan. Stir-fry until the meat is cooked through and tender.
  4. Push the goat meat to one side of the pan and pour the beaten eggs into the empty side. Scramble the eggs until they are cooked.
  5. Mix the cooked eggs with the goat meat in the pan.
  6. Add the mixed vegetables to the pan. Stir-fry for a few minutes until the vegetables are slightly tender.
  7. Add the cooked rice to the pan. Break up any clumps and stir-fry with the other ingredients.
  8. Drizzle sweet soy sauce and regular soy sauce over the rice. Add shrimp paste if using. Mix well to ensure the rice is evenly coated.
  9. Season with salt and pepper to taste.
  10. Continue to stir-fry until everything is heated through and well combined.
  11. Garnish with sliced cucumber, tomato, and fried shallots.
  12. Serve hot with lime wedges on the side.
