NASI KERBAU AYAM
Nasi Kerbau with Chicken (Nasi Kerbau Daging Ayam) is a variation of the traditional Nasi Kerbau from Kudus, Indonesia, substituting buffalo meat with chicken. Here’s a recipe to create this delicious dish:
Ingredients:
For the Rice:
- 2 cups of jasmine rice, rinsed and drained
- 2 cups of coconut milk
- 1 cup of water
- 2 pandan leaves, tied into a knot
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 1 bay leaf
- 1 teaspoon of salt
For the Chicken:
- 500 grams of chicken breast or thighs, thinly sliced
- 3 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 5 shallots, minced
- 2 red chilies, sliced (optional)
- 2 tablespoons of sweet soy sauce (kecap manis)
- 1 tablespoon of soy sauce
- 1 teaspoon of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric powder
- Salt and pepper to taste
- 200 ml of water
- 2 kaffir lime leaves
- 1 lemongrass stalk, bruised
For the Garnishes/Side Dishes:
- Fried shallots
- Sliced cucumber
- Boiled eggs or omelet, sliced
- Sambal (Indonesian chili paste)
- Kerupuk (Indonesian crackers)
- Fresh herbs (such as kemangi or Thai basil)
Instructions:
Preparing the Rice:
Cook the Rice: In a rice cooker or pot, combine the rinsed jasmine rice with coconut milk, water, pandan leaves, lemongrass stalks, kaffir lime leaves, bay leaf, and salt.
Cook: If using a rice cooker, set it to cook. If using a pot, bring the mixture to a boil over medium heat, then reduce the heat to low, cover the pot, and let it simmer until the rice is cooked and the liquid is fully absorbed (about 15-20 minutes).
Fluff the Rice: Once cooked, discard the leaves and lemongrass stalks. Fluff the rice with a fork to separate the grains.
Preparing the Chicken:
Sauté Aromatics: Heat the vegetable oil in a large pan over medium heat. Add the minced garlic, shallots, and red chilies (if using) and sauté until fragrant and the shallots are translucent.
Add Spices and Chicken: Add the ground coriander, cumin, and turmeric powder to the pan and stir well. Add the thinly sliced chicken and cook until browned.
Season and Simmer: Add the sweet soy sauce, soy sauce, salt, and pepper. Stir to coat the chicken evenly. Add the water, kaffir lime leaves, and bruised lemongrass stalk. Bring to a simmer, reduce the heat, and let it cook until the chicken is tender and the liquid has reduced (about 20-30 minutes).
Assembling the Nasi Kerbau Daging Ayam:
Plate the Rice: Place a generous serving of coconut rice in the center of a plate.
Add the Chicken: Spoon the cooked chicken next to the rice.
Add Side Dishes: Arrange the fried shallots, sliced cucumber, boiled eggs or omelet, sambal, kerupuk, and fresh herbs around the rice.
Serve: Garnish with additional fried shallots and serve with lime wedges if desired.
