NASI UDUK

 Nasi Uduk is a popular Indonesian dish made of coconut milk-infused rice, traditionally served with a variety of side dishes. It’s a flavorful and aromatic meal often enjoyed for breakfast or lunch. Here's a detailed recipe for preparing Nasi Uduk at home:


Ingredients:

For the Rice:

  • 2 cups of jasmine rice, rinsed and drained
  • 2 cups of coconut milk
  • 1 cup of water
  • 2 pandan leaves, tied into a knot
  • 2 lemongrass stalks, bruised
  • 3 kaffir lime leaves
  • 1 bay leaf
  • 1 teaspoon of salt

For the Garnishes/Side Dishes:

  • Fried shallots
  • Sliced cucumber
  • Boiled eggs or omelet, sliced
  • Fried chicken or fried tempeh
  • Sambal (Indonesian chili paste)
  • Kering tempeh (sweet and spicy fried tempeh)
  • Serundeng (spiced grated coconut)

Instructions:

Preparing the Rice:

  1. Cook the Rice: In a rice cooker or pot, combine the rinsed jasmine rice with coconut milk, water, pandan leaves, lemongrass stalks, kaffir lime leaves, bay leaf, and salt.

  2. Cook: If using a rice cooker, set it to cook. If using a pot, bring the mixture to a boil over medium heat, then reduce the heat to low, cover the pot, and let it simmer until the rice is cooked and the liquid is fully absorbed (about 15-20 minutes).

  3. Fluff the Rice: Once cooked, discard the leaves and lemongrass stalks. Fluff the rice with a fork to separate the grains.

Preparing the Side Dishes:

  1. Fried Shallots: Thinly slice shallots and fry them in hot oil until golden and crispy. Drain on paper towels.

  2. Boiled Eggs or Omelet: Boil eggs to your desired doneness or make a simple omelet and slice it into strips.

  3. Fried Chicken or Tempeh: Season chicken pieces or tempeh with salt and pepper, then fry until crispy and cooked through.

  4. Sambal: Prepare sambal by blending red chilies, shallots, garlic, tomatoes, and salt, then sautéing the mixture in oil until fragrant and slightly caramelized.

  5. Kering Tempeh: Cut tempeh into small pieces, fry until crispy, then toss with a sweet and spicy sauce made from palm sugar, tamarind, and chili.

  6. Serundeng: Toast grated coconut with a mixture of spices like coriander, cumin, and turmeric until golden and fragrant.

Assembling the Nasi Uduk:

  1. Plate the Rice: Place a generous serving of coconut rice in the center of a plate.

  2. Add Side Dishes: Arrange the fried shallots, sliced cucumber, boiled eggs or omelet, fried chicken or tempeh, sambal, kering tempeh, and serundeng around the rice.

  3. Serve: Garnish with additional fried shallots and a lime wedge if desired.
