SEMUR AYAM
Semur Ayam is a classic Indonesian dish featuring chicken braised in a rich, sweet, and savory soy-based sauce. This comforting dish is often enjoyed with steamed rice. Here’s how you can make Semur Ayam at home:
Ingredients:
- 1 kg of chicken pieces (bone-in for more flavor)
- 3 tablespoons of vegetable oil
- 6 shallots, thinly sliced
- 4 cloves of garlic, minced
- 2 cm piece of ginger, minced
- 2 cm piece of galangal, bruised
- 3 kaffir lime leaves
- 2 Indonesian bay leaves (salam leaves)
- 2 lemongrass stalks, bruised
- 4 tablespoons of sweet soy sauce (kecap manis)
- 2 tablespoons of soy sauce
- 1 tablespoon of palm sugar (or brown sugar)
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground nutmeg
- 1/2 teaspoon of ground black pepper
- Salt to taste
- 500 ml of water or chicken broth
- 2 tomatoes, chopped
- Fried shallots for garnish
Instructions:
Preparing the Chicken:
- Clean the Chicken: Rinse the chicken pieces and pat them dry with paper towels.
Cooking the Semur:
Sauté Aromatics: Heat the vegetable oil in a large pan or pot over medium heat. Add the sliced shallots, minced garlic, ginger, and bruised galangal. Sauté until fragrant and the shallots are translucent.
Add Herbs and Spices: Add the kaffir lime leaves, bay leaves, and bruised lemongrass. Continue to sauté for a few minutes to release the aromas.
Brown the Chicken: Add the chicken pieces to the pan and cook until they are browned on all sides.
Add Seasonings: Stir in the sweet soy sauce, soy sauce, palm sugar, ground coriander, ground nutmeg, and ground black pepper. Mix well to coat the chicken with the seasonings.
Simmer: Pour in the water or chicken broth and bring the mixture to a boil. Add the chopped tomatoes. Reduce the heat to low and let it simmer uncovered for about 30-45 minutes, or until the chicken is tender and the sauce has thickened. Stir occasionally.
Adjust Seasoning: Taste and adjust the seasoning with salt if needed.
Serving:
Garnish and Serve: Transfer the Semur Ayam to a serving dish and garnish with fried shallots.
Accompaniments: Serve with steamed rice and side dishes like sambal, fresh vegetables, or kerupuk (Indonesian crackers).
