SEMUR JENGKOL

 Semur Jengkol is a traditional Indonesian dish made with jengkol (dogfruit), which has a unique flavor and aroma. This dish is typically braised in a sweet and savory soy-based sauce. Here's how to make Semur Jengkol:


Ingredients:

  • 500 grams of jengkol (dogfruit)
  • 3 tablespoons of vegetable oil
  • 5 shallots, thinly sliced
  • 3 cloves of garlic, minced
  • 2 cm piece of ginger, minced
  • 2 cm piece of galangal, bruised
  • 3 kaffir lime leaves
  • 2 Indonesian bay leaves (salam leaves)
  • 2 lemongrass stalks, bruised
  • 3 tablespoons of sweet soy sauce (kecap manis)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of palm sugar (or brown sugar)
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground nutmeg
  • Salt and pepper to taste
  • 500 ml of water
  • Fried shallots for garnish

Instructions:

Preparing the Jengkol:

  1. Boil the Jengkol: Rinse the jengkol and place them in a pot of water. Boil for about 30-45 minutes or until they are tender. Drain and peel the skins off the jengkol.
  2. Flatten the Jengkol: Once peeled, slightly flatten each jengkol using a pestle or the back of a knife.

Cooking the Semur:

  1. Sauté Aromatics: Heat the vegetable oil in a large pan over medium heat. Add the shallots, garlic, ginger, and galangal. Sauté until fragrant and the shallots are translucent.
  2. Add Herbs and Spices: Add the kaffir lime leaves, bay leaves, and bruised lemongrass. Continue to sauté for a couple of minutes.
  3. Add Jengkol and Seasonings: Add the boiled and flattened jengkol to the pan. Stir in the sweet soy sauce, soy sauce, palm sugar, ground coriander, and ground nutmeg. Mix well to coat the jengkol with the seasonings.
  4. Simmer: Pour in the water and bring the mixture to a boil. Reduce the heat to low and let it simmer uncovered for about 30-45 minutes, or until the sauce has thickened and the jengkol is infused with the flavors. Stir occasionally.
  5. Adjust Seasoning: Taste and adjust the seasoning with salt and pepper as needed.

Serving:

  1. Garnish and Serve: Transfer the Semur Jengkol to a serving dish and garnish with fried shallots.
  2. Accompaniments: Serve with steamed rice and side dishes like sambal, fresh vegetables, or kerupuk (Indonesian crackers).
