Ingredients:
- 4 medium-sized potatoes, peeled and cut into cubes
- 3 tablespoons of vegetable oil
- 5 shallots, thinly sliced
- 3 cloves of garlic, minced
- 2 cm piece of ginger, minced
- 2 cm piece of galangal, bruised
- 3 kaffir lime leaves
- 2 Indonesian bay leaves (salam leaves)
- 2 lemongrass stalks, bruised
- 4 tablespoons of sweet soy sauce (kecap manis)
- 2 tablespoons of soy sauce
- 1 tablespoon of palm sugar (or brown sugar)
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground nutmeg
- 1/2 teaspoon of ground black pepper
- Salt to taste
- 500 ml of water or vegetable broth
- Fried shallots for garnish
Instructions:
Preparing the Potatoes:
- Peel and Cube the Potatoes: Peel the potatoes and cut them into bite-sized cubes. Rinse them under cold water to remove excess starch.
Cooking the Semur:
Sauté Aromatics: Heat vegetable oil in a large pan or pot over medium heat. Add the sliced shallots, minced garlic, ginger, and bruised galangal. Sauté until fragrant and the shallots are translucent.
Add Herbs and Spices: Add the kaffir lime leaves, bay leaves, and bruised lemongrass. Continue to sauté for a few minutes to release the aromas.
