Semur Tempe - delicious Indonesian dish where tempeh
Semur Tempe is a delicious Indonesian dish where tempeh, a fermented soybean cake, is simmered in a flavorful sweet and savory sauce. It's a popular vegetarian option that's rich in protein and full of flavor. Here's how you can make Semur Tempe at home:
Ingredients:
- 300 grams of tempeh, cut into cubes or slices
- 3 tablespoons of vegetable oil
- 5 shallots, thinly sliced
- 3 cloves of garlic, minced
- 2 cm piece of ginger, minced
- 2 cm piece of galangal, bruised
- 3 kaffir lime leaves
- 2 Indonesian bay leaves (salam leaves)
- 2 lemongrass stalks, bruised
- 4 tablespoons of sweet soy sauce (kecap manis)
- 2 tablespoons of soy sauce
- 1 tablespoon of palm sugar (or brown sugar)
- 1 teaspoon of ground coriander
- 1/2 teaspoon of ground nutmeg
- 1/2 teaspoon of ground black pepper
- Salt to taste
- 500 ml of water or vegetable broth
- 2 tomatoes, chopped
- Fried shallots for garnish
Instructions:
Preparing the Tempeh:
Steam the Tempeh: Steam the tempeh for about 10 minutes to soften it slightly. This will help the tempeh absorb the flavors of the sauce better.
Fry the Tempeh: Heat vegetable oil in a pan over medium heat. Fry the steamed tempeh until golden brown on all sides. Remove from the pan and set aside.
Cooking the Semur:
Sauté Aromatics: In the same pan, add a little more oil if needed. Sauté the sliced shallots, minced garlic, ginger, and bruised galangal until fragrant and the shallots are translucent.
Add Herbs and Spices: Add the kaffir lime leaves, bay leaves, and bruised lemongrass. Continue to sauté for a few minutes to release the aromas.
Add Tempeh and Seasonings: Return the fried tempeh to the pan. Stir in the sweet soy sauce, soy sauce, palm sugar, ground coriander, ground nutmeg, and ground black pepper. Mix well to coat the tempeh with the seasonings.
Simmer: Pour in the water or vegetable broth and bring the mixture to a boil. Add the chopped tomatoes. Reduce the heat to low and let it simmer uncovered for about 20-30 minutes, or until the sauce has thickened and the tempeh is infused with the flavors. Stir occasionally.
Adjust Seasoning: Taste and adjust the seasoning with salt if needed.

Garnish and Serve: Transfer the Semur Tempe to a serving dish and garnish with fried shallots.
